Ithaca Water Buffalo produces yogurt at their creamery in Interlaken between the two largest Finger Lakes, Cayuga and Seneca.
The herd of 100 water buffalo lives on a farm in Lodi, also between the two lakes.
A milking herd is unique in New York and rare in North America.
The milk is vat-pasteurized, slowly heated to a lower temperature than factory produced milk, and it is not homogenized. The yogurt and a blend of Jersey and water buffalo milk are available on Saturdays at the Regional Market on the north side.
